In this post I describe real cock tail – amazing multicolor drink – Pousse Cafe. The Pousse Cafe cocktail is so old creation. This drink was invented in the Europe (France), probably. But we can found suggestions that this cocktail was invented in New Orlean, USA. The first print recipe with illustration I was found in the great How to Mix Drinks, or the Bon-Vivant’s Companion by Jerry Thomas in 1862. Layered cocktail with name Pousse l’Amour consist of brandy, two liqueurs and egg yolk. The real fancy drink! The Gary Regan in yours The Joy of Mixology specify that Pousse Cafe are drinks made by floating one ingredient on top of another, or several others, to create a multilayered effect.
Sambuca is sweet and strong anise and elderberry-based liqueur from Italy. It is one of my favorite liqueur for drink straight, but cocktails with sambuca is so rare. This simple cocktails is very delicious and refreshing afterdinner drink.
Sambuca Coffee Frappe
40 ml sambuca
20 ml coffee liqueur (Kahlua)
Stir both ingredient with ice. Build in cocktail glass with crushed ice. Garnish with a three roasted coffee beans.
Sambuca is one of my favorite liqueur. First, I like sweet anise flavor and taste of it. Second, I like very much to ignite sambuca on saturday night and go to a club. I use, as a rule, my own method of flaming sambuca which is so similar to a traditional con mosca method.
Flaming Sambuca. Step 1. Equipment.
Prepare some equipment, which you can see on the photo. You need a big and thick-walled snifter, an old-fashioned or rocks glass, jigger, bar-spoon, napkin, straw, and matches.

Put 3/4 – 1 oz (20 – 30 ml) of sambuca in the snifter and add 1 dash of coffee liqueur in an old-fashioned glass (I use Kahlua). If you want to drink flaming sambuca in traditional con mosca way, omit the coffee liqueur and put three coffee beans (which symbolize health, wealth and good luck) into a snifter. Use good sambuca for good results.

Rotate the snifter some times and set on fire. Continue to rotate the snifter. Please operate VERY carefully.

Pour the flame in an old-fashioned glass.

Place the snifter over napkin with a straw in the pictured way:
Drink a hot sambuca (warning! very, very hot sambuca may cause of burn! sip responsibly) and inhale from the snifter using a straw. Enjoy!
